The end of summer brings with it a magical moment: the harvest, one of the oldest and most fascinating agricultural rituals, part of the Italian traditions and of inestimable historical and anthropological value.
A moment of pooling and contact with nature, in which all the attention and passion for grapes are transformed into the long-awaited harvest.
The grape harvest
Do you know how a harvest takes places? It all begins when the grapes ripen: at the first sunrise, benefiting from the fresh morning air, the harvest of the bunches starts, by selecting with extreme care those in the best conditions both in appearance and ripeness, rejecting those with defects, moulds or rotten grapes.
Knowing how to select an intact and faultless grape is essential to produce quality wine.
Each bunch is then gently placed inside a basket, with the awareness that each one is the result of a year of hard work and commitment.
From bunch to grape must
After the harvest the bunches are transported to the cellars where they are pressed: this phase allows to extract the juice and pulp from the grapes, creating the must that will later be transformed into wine. In ancient times the grapes were gently crushed in the vats with bare feet; it was a time of celebration and pooling for the whole community. Nowadays this practice is no longer acceptable from the hygienic point of view. This is why crushers or pneumatic presses have been used for many years.
In some cases, the pressing is preceded by destemming, an operation that, thanks to the centrifugal force, allows the separation of the grapes from the stalks avoiding the escape of the organic acids contained in them (tartaric, racemic, potassium and not noble tannins).
When the must is not contaminated with the substances contained in the stalks it is possible to obtain finer and more elegant wines, without the herbaceous and bitter scents released by the stems.
However, there are also positive aspects that derive from the use of the stalks: it is possible to obtain a better fermentation thanks to the additional quantity of yeast that the stalks carry on their surface and the increased proliferation of microorganisms due to their ability of their harshness to engulf air.
Another advantage of wine making process including stalk is the lowering of the alcohol content by virtue of the thinner effect of the stalk on the other components of the wine and the ability of the stalk to partially absorb ethanol molecules.
From fermentation to wine
Once the must has been obtained it can be poured in barrels or special tanks, the place where fermentation takes place, a complex chemical process during which yeasts convert sugars into alcohol and carbon dioxide.
This process reveals the aromas and organoleptic qualities of grapes, revealing all the potential qualities of wine.
The skins of the grapes are used to produce grappa – like the Grappas of Castello di Spessa – and the stalks used in the field of cosmetics, for the coloring of fabrics and electricity production.

Experience the “Vinum SPA & Wine” package and let yourself be overwhelmed by the past, with a guided tour to the spectacular medieval cellars and the military bunker, discovered in 1987 during the renovation and modernization works. The latter, forgotten 18 meters below ground, turned out to be the ideal place for the aging of the wines of the Castle thanks to its constant temperature of 14°C.
During the tour you will take a look at the place where the wines are aging, fully revealing their aromatic bouquet. The tour ends with a wine tasting of the DOC Collio and Isonzo references of Castello di Spessa.
And to end the day on a high, what could be better than a bit of relaxation at the Vinum SPA?
